Mainly just want to talk about the popular AAA that once ran the space of games back in the 90s and 2000s. Main focus would be on Epic, Bethesda, Valve, and BioWare.
There is always a replacement in the modern space for the classic video games of those earlier times. Although they don’t come from the original creators (Bethesda and BioWare) which I think is a fine thing, as those companies have much more important jobs.
Over time Bethesda has grown into a diverse publisher, which in my opinion is what most big AAA companies should do when they get to a certain size. Now you have Bethesda funding more diverse projects, mainly through ID and Arkane. Who both make some of the best games in their respective genres. But what about the RPGs? Obsidian has filled that role partially, and will in the future, Pillars of Eternity 2 is one of the best RPGs out there, and just look at Avowed
With Bioware, although they don’t really rise like the other 3. They do have a replacement and that is my main point. If you miss classic BioWare titles. Try modern Larian titles. And with them developing the new Baldurs Gate, they have in my eyes cemented themselves as the new BioWare. Cause let’s be honest the only thing new and old BioWare have in common is the name.
Valve and Epic have taken a much bigger role however. Valve has made PC culture what it is today and it wouldn’t be where it is without them. Epic has Unreal 4, and a platform that is very pro developer, and further helps these devs.
My main point is that even if these developers don’t make good games anymore. They have planted their seeds in gaming, and are helping and supporting the small developers that they used to be. I mean most popular AAA or big indie companies were pushed along by one of the modern giants

Epic with Epic Games Store
Valve with Steam
EA with Respawn, Popcap, and their overall support of Indie games
Xbox with Rare, now Obsidian
PlayStation with Insomniac and Sucker Punch
Bandai with FromSoft and Arc
